# Tomatoes Stuffed with Spinach & Cheese
## Ingredients
- [ ] 6 medium tomatoes
- [ ] Salt (for inside of tomatoes)
- [ ] 1 (10 oz.) package frozen chopped spinach, defrosted
- [ ] 2 eggs
- [ ] 1/2 tsp salt
- [ ] 1/4 cup grated Parmesan cheese
- [ ] 1/2 cup ricotta cheese or cottage cheese
- [ ] 1/8 tsp grated nutmeg
- [ ] Pepper to taste
- [ ] 2 tbsp butter, cut into small pieces
## Steps
1. Cut off the tops of the tomatoes and scoop out the pulp and seeds.
2. Sprinkle salt inside each tomato and place them upside down on a paper towel for 50 minutes to drain excess moisture.
3. Squeeze out as much moisture as possible from the defrosted spinach.
4. In a bowl, mix the spinach with eggs, Parmesan cheese, ricotta or cottage cheese, nutmeg, salt, and pepper. Beat until well combined.
5. Stuff each tomato with the spinach mixture and place them in a well-buttered baking dish.
6. Place small pieces of butter on top of each stuffed tomato.
7. Bake at 350°F for 30 minutes.
